Meals, No Ante
3 tablespoons butter
2 tablespoons olive oil
3 garlic cloves, minced
1 1/4 cups lactose-free milk
3/4 cups vegetable oil
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup grated parmesan cheese
3/4 cups mozzarella cheese
1/2 lb fettuccini
1 lb chicken
Cook the chicken and cut it into bite-sized pieces.
Melt butter in medium saucepan with olive oil over medium-low heat.
Add the garlic, milk, vegetable oil, salt, and pepper and bring mixture to a simmer, stirring frequently.
Add the parmesan cheese and continue simmering for 8-10 minutes or until sauce has thickened and is smooth.
When sauce has thickened add the mozzarella cheese and stir frequently until smooth.
Cook pasta according to box instructions.
Mix the sauce, pasta, and chicken together and serve.
This reheats extremely poorly.
